As I was walking into the store today, I notice this beautiful planter that had large leaf basil growing to near perfection.  I make a comment to Amos,” someone better use this or I’m gonna chop it right down.”  When I as at lunch today,  I remembering  having this super yummy pesto recipe that was sitting on Beth’s desk from yesteryear.

5 minute Pesto

1 head of roasted garlic

2 cups fresh large leaf basil from the garden

1/3 cup olive oil

1/4 teaspoon sea salt

1/2 teaspoon cayenne pepper( I like it with flare/you can use black pepper)

1/4 cup grated cheese( use low fat anything, your hips will thank you)

Super basic, combine all ingredients into a food processor and mix until throughly combined.  Pesto can go on just about anything.

Hot or Cold pasta

Smoother it on cooked chicken, pork or filet.

Spread it on thinly sliced french bread.  If you want to add years of guilt, add melted goat cheese and top with Pesto.
